Achari chickpeas salad with pineapple supermunchies

 

Whether you’re on a low carb diet or trying to fuel up for a big or particularly busy day, feel more satisfied with one of the most delicious and high protein Achari chickpeas salad.

 

Ingredients

1 bowl chickpeas

1 Cup Baby Spinach

1/2 teaspoon salt

3 to 4 Cherry tomatoes

1 lime, juiced

Onion

2 teaspoons paprika

1 teaspoon salt

1⁄2 teaspoon ground cumin

1⁄2 teaspoon ground coriander

1⁄4 teaspoon ground turmeric

3 tablespoons extra-virgin olive oil

1 tablespoon minced garlic

1 tablespoon lime juice

100 grams-firm or firm water-packed tofu, drained

2⁄3 cup non-fat plain yogurt

Pineapple munchies



Instructions –

  1. In a large mixing bowl, toss all the veggies and achari chickpeas together.
  2. Add virgin olive oil with all the other spices to make the salad more desirable and tasty.
  3. Serve the salad in a bowl and top it off with some pineapple munchies.
