The hero of this dish is the crispy Achari Chickpeas it adds an extra dimension of flavour and crunch to the Kale tossed in a creamy sweet and zesty dressing. Its hearty, Savoury and subtly spiced.
Whisk all the dressing ingredients to combine into a smooth pouring consistency. Use water to adjust if too thick. Taste and adjust seasonings as desired. You can make this in advance and set aside.
To prep the Kale, tear into bite sized pieces or as desired, mix and coat the kale with add a Tbsp each of lemon juice and olive oil. This will soften the texture and reduce any bitterness.
In a large mixing bowl, add the Kale and toss the dressing to coat as desired.
Lastly, toss in the chickpeas and serve.
